Kalette and Feta Loaf
Nothing, absolutely nothing, beats the smell of a freshly baked loaf. And this recipe is no exception to the rule.
Not only does it smell amazing, but it tastes phenomenal and is almost a meal in itself.
So, what are you waiting for? You’re only an hour or so away from your first Kalettes® and feta loaf.
Ingredients
• 1 Pack Kalettes®
• 225g All-Purpose Flour
• 150g Whole Wheat White Flour
• 23g tbsp Baking Powder
• Generous Pinch Salt And Black Pepper
• 225g Crumbled Feta
• 2 Eggs
• 120ml Cup Extra Virgin Olive Oil
• 180g Plain Greek Yogurt (2% Or Full Fat)
• 180g Cup Whole Milk
• 60g Chopped Walnuts (Optional)
Method
Preheat oven to 350 degrees and grease a loaf pan with baking spray or line with parchment paper.
Wash the Kalettes®, separate the leaves and dry thoroughly. Chop the Kalettes® finely into fork length pieces.
Combine the flours, baking powder, salt, pepper, Kalettes® and feta in a large bowl.
Whisk together the eggs, olive oil, yogurt and milk in another bowl.
Pour the wet ingredients into the dry ingredients and mix together until just combined.
Transfer the batter into the loaf pan.
Sprinkle the chopped walnuts on top if using.
Bake for 45-50 minutes until a toothpick inserted in the middle of the loaf comes out clean and edges start to brown.
Let sit for 10 minutes before removing to a cooling rack.
